the Best Raspberry Protein Pancakes
  1. Avocado oil spray
  2. 1 flax egg (1 tbsp ground flax seeds + 3 tbsp water)
  3. 1/2 cup unsweetened almond milk
  4. 1/2 banana, mashed
  5. 1/2 cup almond flour
  6. 1 scoop Vega Vanilla Protein Powder 
  7. ½ cup fresh raspberries
  8. Maple syrup for serving
  1. Add flax egg ingredients to a small mixing bowl and allow to sit for 5 minutes to form a gel.
  2. Add the remaining ingredients to the bowl except for the raspberries and whisk vigorously with a fork until well combined.
  3. Spray a skillet with nonstick spray and heat over medium. Once warm, drop the pancake batter onto the skillet into several small pancakes.
  4. Spread with the back of a spatula to make a thin circle.
  5. Cook for 10 minutes, flipping once halfway through.
  6. Serve immediately with fresh raspberries and maple syrup.
